Roasted Eggplant Baba Ganoush w/ Paleo Crackers

This one is a winner! So much so that my family demolished it within 5 minutes- no joke! It tastes like the real deal and is full of healthy fats, vitamins and minerals.

This is a perfect party food and literally takes no rime to whip up! I chucked this in the oven, went to the beach and came back in n hour and viola it was done! Everyone will love this dip and crackers whether or not you serve it alone or with a meal (slow cooked lamb and pomegranate is delicious with this!)

Ingredients for Baba Ghanoush

  • 1 Medium Eggplant
  • 3 Large garlic cloves
  • 2 Tablespoons of Tahini
  • 2 Tablespoons of Olive Oil
  • 1 Tablespoon of Lemon Juice
  • I Teaspoon of cumin
  • Generous pinch of salt & Pepper


  1. Preheat the oven to 180 degrees
  2. cut the eggplant in half length ways and rub with olive oil
  3. sandwich the garlic cloves between the two halves and wrap in foil, bake for one hour
  4. Take the eggplant out and scoop out the flesh into a blender along with the garlic, discarding the skin
  5.  put all the rest of the ingredients into the blender with the eggplant and garlic and wizz until smooth
  6. drizzle with olive oil if desired

Ingredients for Paleo Crackers

  • 1 cup of Almond Meal
  • 1 large egg
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of sage
  • Salt & pepper


  1. preheat oven to 180 degrees
  2. place all ingredients into a blender and mix
  3. spread mixture onto the baking sheet and bake for at least 15minutes
  4. Enjoy!
